The grapes are selected and harvested by hand in the vineyard during the night in the middle of the winter when the temperature is below zero. The grapes are then fermented for 90 days in stainless steel vats. The yeast cultures do not consume all of the sugar content into alcohol which results in a sweet wine with acidity.
Tasting Notes:
Colour: Pale steely yellow.
Aroma: Ripe and cooked fruit, tropical fruit compote.
Taste: Cooked apple, sweet pineapple soaked in alcohol. Semi sweet and acidic.
